Finca El Jardin is a family-owned coffee farm in Montecillos, La Paz, Honduras, managed by Mario Samuel Mejia Rodriguez. Established in 1981 and passed down through the family, the farm continues four generations of coffee production.
This Yellow Catuai lot undergoes an Aerobic Volcano Natural process. After flotation and cherry selection, the coffee is formed into conical piles where aerobic fermentation develops for up to 120 hours. The cherries are then sun-dried on African beds or patios for 15–25 days.
In the cup, expect an expressive combination of white grape and red currant, complemented by a distinctive cinnamon note.
